Sauce for Roasts: Pound basil in the mortat and add pepper and mix with verjuice. This sauce is good with all roasts and boiled eggs; and failing verjuice, use orange or lemon juice.

Fresh Basil
1/2 C
Verjuice
Pepper to taste

Pick basil leaves from stems. Chop coarsely and put into food processor. Add verjuice and pepper and process until fairly smooth. Serve immediately to preserve green-ness.
