Sauce Sarrasine - Take Almonds, fry them in oil, & bray them, temper them with almond milk & red wine, & your third party shall be sugar / & if it be not thick enough, allay it with amydon or with flour of rice; color it with alkined, boil it, dress it, flourish it above with pomegranate, and serve forth.

Figey - Take figs, & boil them in wine, & bray them in a mortar with lied bread; temper it up with good wine/ boil it/ do thereto good spices, & whole raisins / dress it / flourish it above with pomegranates.
